We all have those nights [or days], when we have no desire to cook [even me, who lives to create recipes and cook food]. When those days hit, it’s important to have a repertoire of go-to recipes that can quickly come together. This was exactly where I was at a few weeks ago: starving with no desire to spend an ounce of energy cooking. The result was this….       tunaolivesticks.152806

Ingredients:

  • 1 can water packed albacore tuna
  • 1 tbsp Dijon mustard
  • 2 tbsp plain Greek yogurt (add more if the tuna seems dry)
  • 1 tsp fresh dill, finely chopped
  • ¼ tsp cumin
  • Black pepper to taste
  • 6-8 kalamata olives, quartered lengthwise
  • Celery stalks

Instructions:
Combine tuna, mustard, yogurt, dill, cumin and pepper in a bowl and mix well. Fill celery stalks with tuna mix and top with olives.

Serve as is or top a few whole grain crackers with the tuna mix for variety. The day I made this, I had leftover quinoa in the fridge, so I added a ½ c quinoa on the side for some complex carbs.
