As the weather is cooling off, warmer meals are beginning to make their way back into our kitchen. This delicious quinoa dish is packed with nutrients and energy. Enjoy as a meal in itself or pair with additional vegetables and protein.
- 3 c quinoa
- 2 lb mushrooms, sliced thin
- 6 garlic cloves, finely chopped
- 1 white onion, finely chopped
- 3 tbsp shredded parmesan
- 2 tsp thyme
- ½ tsp oregano
- ¼ c dry white wine
- 1 tbsp extra virgin olive oil
- Salt & pepper to taste
Saute onions, garlic, thyme and oregano over medium heat, 5-7 minutes until soft. Add in mushrooms and stir. Turn heat up to high and add white wine. As the wine comes to a boil, stir ingredients frequently and turn burner heat to medium low. Meanwhile, bring 6 cups of water to a boil and add in quinoa. Cover pan and turn heat down to low and let simmer until all water has absorbed. Combine quinoa with vegetable mix and add parmesan cheese, salt and pepper. Stir mixture until cheese has melted. Cook on low for 5 more minutes to let the flavors combine.
